Recipe: Zucchini & Cheese Bites

Hello Everyone!

Last week we had our annual family road trip vacation to Cape Cod. Of course, within days of leaving, our zucchini plants were bursting at the seams and ready for harvest. We gave many away to friends and family, but still had too many to eat before we hit the road.

Luckily with a little ingenuity (and some Pinspiration), I came up with a solution to kill the proverbial 2 birds with 1 stone… I created a perfect road trip snack out of our bounty of zucchini!

These little bites were really yummy (perfect size for a road snack) and really easy to make (plus I got to empty out some ingredients from my fridge that would have otherwise been questionable upon our return home)!

Zucchini & Cheese Bites (



* as always, feel free to adjust as needed*


  • 4 cups grated zucchini
  • 4 eggs, beaten
  • 1 cup Italian bread crumbs (for flavour without the need for extra seasoning)
  • 1 cup shredded cheese (here I used what I had left in my fridge- Mozza Cheddar and Parmesan)
  • Salt & pepper to taste
  • I would throw some diced onion in for flavour next time, but I didn’t have any before the trip. :)

1. Drain out the water from your grated zucchini by pouring it on to a clean dish towel, wrapping and squeezing.

2. Then toss everything into a big bowl and mix until combined.

3. Fill greased muffin tins evenly. (Mine are silicone and with all the oils from the cheese, I didn’t find I needed to grease the liners first.)

4. Bake at 400 degrees for about 45 minutes (until they’re golden brown on top).


I haven’t tried freezing them, but I would think they will freeze well. Please let me know if you get around to it before I do!
